Restaurant Gaggan

A provocative 14-seat Chef’s Table by Indian-born chef Gaggan Anand — the rock star of Bangkok’s culinary scene and an indefatigable champion of molecular gastronomy. Dinner at Gaggan unfolds as an immersive performance in which guests are invited to smell, touch, listen, guess ingredients, lick desserts off plates and even sing — for two and a half hours with only a brief intermission between the two main acts. The food matches the spectacle: around 80 per cent of the menu is renewed every four months, yet exploding yoghurt spheres, edible «plastic» and soda-marinated fruit lose none of their impact in each new iteration.
