Restaurant Testina

A sibling project of Milan’s Trippa, Testina is devoted to authentic northern Italian cooking and a strict nose-to-tail philosophy. Named after its signature pig’s head dish, the restaurant also serves bone marrow spread on toast, rosemary-scented fried tripe, and rich ragùs wrapped in Savoy cabbage leaves. Among its bestsellers is pappardelle with chicken offal ragù, incorporating crests, kidneys and embryonic eggs. Uncompromising, unusual, and deeply satisfying.
