Fine dining with an Italian soul and a Pacific heart. Noi is the most successful project to date of Argentine-Italian chef Paulo Airaudo, whose menus place extraordinary emphasis on the marine world. Some tasting sequences consist entirely of fish and seafood dishes, ranging from pasta with sea urchin roe to banana gelato topped with sturgeon caviar. Menus are refreshed every two to three months, with each new iteration shaped by ingredients sourced from across the globe.
